If you have been following us and reading the last edition of The Voice, you saw our recommended recipes for those who may have limited access to a full kitchen. We hope you have tried them or thought about them. We try to be cost efficient as well when giving you these recipes. Therefore, if one recipe calls for a certain ingredient, don’t worry if you don’t have it. You can always substitute one ingredient for another. Also keep in mind that if you buy an ingredient, it should last you beyond one meal. For example, if you are cooking for yourself and the recipe calls for red bell peppers, understand you only need a sliver of that pepper saving the rest for another time. Here are two more recipes you can add to the cookbook. 

Avocado toast 

Ingredients: 

Any bread of your choice

Avocado or avocado spread

Salt and pepper

Microwave your bread for about 30 seconds. You can buy an avocado spread pre-made at any store. If you prefer to make it yourself, you can buy an avocado  for less than one dollar. You can chop up the avocados in the shape you wish. You can mash them up into a spread, cut them longways or in cubes. The rest is up to you! I always feel salt and pepper is a necessity. I also typically add sriracha or hot sauce to my toast. Once you are done adding your toppings, you are good to go!

Loaded baked potato 

Ingredients:  

1 potato 

Butter 

Shredded Cheese of choice

Sour cream 

Salt and pepper 

This recipe is so easy because all you need to do is microwave a potato. To do so, pierce holes into and all around  the potato with a fork to allow steam to disperse. Spread butter or oil around the potato adding salt and pepper to it. Microwave it on a safe dish for 5 minutes. It may need less so keep an eye on it. Flip it once in a while adding 2 more minutes. You will know if it’s done if it is soft and cooked thoroughly. After it is done cooking, you can add any toppings you wish. Sour cream, shredded cheese, bacon (optional), and anything else that comes to mind. Sit down and enjoy your meal!

Fast tips: Make sure your dishes are microwavable safe. At Walmart, you will find many dishes made specifically for microwaving meals. You will see steamers, bacon makers, and other great investments. If you buy yourself a medium size dish you can cook in, it will open up more opportunities for things you can cook.
